The Producer Luís Pato has been making wine here since 1980, ten years after his father became the first producer to estate bottle wines after the Bairrada DOC was granted. These days, and more than 30 vintages later, Luis has 60 hectares of vines, majoring on Baga for red wines, and Bical and Maria Gomes for whites.
Winemaking The Maria Gomes grape variety is one of the main white grape varieties from Bairrada. Picking occurs 2 weeks earlier than other white grapes to obtain the higher levels of acidity needed for sparkling wines. Grapes are fermented in separate stainless steel vats under temperature control for 2 weeks. The second fermentation occurs inside the bottle to preserve the flavour of flowers and fruits from the main grape.
Tasting notes A delicious wine which should replace Prosecco the world over! Sweet-floral fruits on the nose, a palate of apples and fresh lemon with a touch of toasty and biscuity flavours. Dry, but not too Brut.
Food Pairing Excellent as an aperitif or with seafood. Clams and prawns have my mouth watering.
