Wine Making Like Sauterne grapes have been affected by botrytis cinerea, also known as noble rot. Total destemming, soft pneumatic pressing seizing 20% of grape juice, natural static clarification, alcoholic fermentation at 20ºC. 6 months battonage and 12 months in seasoned oak barrels
Tasting notes Light hay colour. Botrytized, with nuances of butter, dried fruit, dried apricot and citric floral notes. Complex, with distinct freshness and well balanced. Long and persistent finish.
