Outono de Santar Late harvest (375ml), 2013
Style/ Colour Sweet Wine (Botrytized)
Grape Varieties 90% Encruzado, 10% Furmint
Wine Making Only made when conditions permit, this delicate dessert wine features late harvest grapes and, like Sauternes, grapes which have been affected by botrytis cinerea, also known as noble rot. Encruzado is the Dão’s leading white variety, here uniquely blended with a splash of Furmint, the grape of Hungary’s famous sweet Tokaji wines. After total destemming, the grapes were gently pressed, extracting just 20% of the grape juice, which was fermented at 20ºC. The resulting nectar was aged in seasoned oak barrels for a year, with batonnage for the first six months.
Tasting notes Light hay colour. Botrytized, with nuances of butter, dried fruit, dried apricot and citric floral notes. Complex, with distinct freshness and well balanced. Long and persistent finish.
Food pairing Foie gras or delicate desserts
Serving Recommendations Drink at 12ºC
