Winemaking Fully de-stemmed and a short skin maceration. Long fermentation at low temperatures of 14-18°C.
Tasting notes Deep cherry red. Smoky, wild black and red fruit, particularly plum and cherry. Surprisingly soft tannins for the variety. Bracing acidity and compact with a supple texture.
Food Pairing Pair with hearty pork and braised meats, Bacalhau à Brás (salt cod hash) and oily briny fish.
Serving recommendations Should be serve slightly chilled 14-16°C.
