Winemaking Biodynamic farming. Harvested by hand the grapes were transported to the winery in 20 kg boxes. Grapes were foot trodden in traditional “lagares”. Fermentation took place over six days in “lagar” with indigenous yeasts. This was followed by eighteen months of ageing in 600 litre barrels.
Tasting notes North-facing vineyards give the wine acidity and freshness, finesse, joy, and youth. The south facing vineyards give the wine volume, body, structure, power, and fruit intensity. Floral nose with resinous notes of gum cistus. Red currants, blackcurrant and fleshier plum fruit on the palate with a mineral finish.
Food pairing Red meats, game and cheese.
