Grape Varieties 100% Encruzado
Winemaking The Encruzado grapes destined for this wine were collected at the winery in 20kg boxes and unloaded directly into a pneumatic press. After crushing the grapes, the must was subject to static decanting at low temperature for a period of 24 hours. It was subsequently transferred to a stainless steel tank where fermentation began. Maturation for 8 months in French oak barrels. Ageing took place on the lees with occasional stirring, or bâtonnage. The remainder of the wine aged in stainless steel tanks on fine lees.
Tasting notes A clear, bright citrine yellow colour. Aromatically intense, with notes of yellow-pulped fruits, such as peaches and nectarines. Floral notes of jasmine. This wine has a complex bouquet with a very well-integrated sweetness courtesy of its ageing in the barrel. On the palate, it is aromatically intense, with further notes of peaches and flowers. A firm and well-integrated acidity invites a balanced and persistent finish.
Food pairing A fantastic aperitif, this wine also pairs wonderfully with refined fish dishes, smoked fish, white meats and poultry. It is also the perfect accompaniment to the region's traditional roasted goat dishes.
Serving recommendations Serve at a temperature between 10ºC-12ºC in large white wine glasses.
